I heard you have to have a contract with like At&T and stuff but that you can also undo it when you get to the other country and unlock the phone ready for another SIM card or contract? Is it true? Will I have any problems doing it?

You will have to get the phone OUT of contract.. Witch is Expensive.. And just as long as the network in Italy runs off of GSM, UMTS, or HSDPA Then you will not have a problem using the iPhone there.. but it WILL have to be unlocked.
